What is Piquette:
Piquette, a centuries-old winemaking style, is a light and refreshing beverage traditionally enjoyed by vineyard workers in France. Made by adding water to leftover grape skins (pomace) and allowing fermentation, it produces a beverage that has a naturally low alcohol content.
For our piquette, we gradually added filtered water and juice back to the skins of Traminette to rehydrate and ferment. For a touch of effervescence, a small amount of sugar is added to the piquette before bottling. This triggers a secondary fermentation inside the bottle, naturally creating the delightful sparkle we enjoy.
